I need to set a count down timer...how can I run a trigger or script that compares inserted timestamp to current time stamp?

Can you help, I need to auto update table field after 72hours if not updated. For example auto change the value of field ‘Status’ to lock if the value of field ‘Payment’ has not been updated after 72 hours. How can I set this?
